      All our pickles are made in the traditional style. The salt/sugar, spices and oil used work as natural preservatives. It's pretty much the same with colour. The spices have a natural colour, which is essentially the colour of our pickles too. And we don't feel the need to extend shelf life beyond the 12 months by adding anything unnatural. Since you'll probably finish them much sooner.
